These are marinated ceviche style. Good but a bit on the rubbery side.  We actually dug this poor fellow out and consumed him!

Sea Cucumber After Slight Molestation!
When bothered, like the one I squeezed, they exude their stomach lining to scare the predator off.  Locals pick 'em up and eat the lining like spaghetti!
